Mutton with dates

Ingredients

  1. Mutton – 1 kg
  2. Cumin – 1 tsp
  3. Cloves – 10
  4. Cardamom – 5-6
  5. Black pepper – 15-20
  6. Bay leaf – 3
  7. Onion – 4 sliced
  8. Chili powder- 1 tsp ( you may add ½ -1 tsp more – if you prefer spicy )
  9. Turmeric powder – 1 tsp
  10. Coriander powder – 1 ½ tsp
  11. Salt – to taste
  12. Sugar – 1 ½ tsp
  13. Ginger paste – 2 tsp
  14. Garlic paste – 2 tsp
  15. Curd – 1 cup
  16. Cashew nuts broken – 2 tb sp
  17. Dates – cut long – 15-20
  18. Green chili split – 3
  19. Chopped coriander leaves – 1 tsp
  20. Oil – 1 tbsp
  21. Ghee – 1tbsp

   Instructions

 

  1. In a non-stick wok ( I used non-stick cooker ) , heat oil & ghee, add 2 to 5 crushed ingredients together with bay leaf fry for a minute, add sliced onion and fry till onion turns golden brown.
  2. Add meat, ginger garlic paste, and 8 to 11 ingredients and fry for 5 -6 minutes.
  3. Add 2 cups of water ( if you are using a cooker ½ cup of water is enough ) mix well cover and cook on slow flame, stirring occasionally add some more water if required till the meat gets tender. ( in the cooker cook for half an hour in slow flame- off the fire let it cool down completely )
  4. In a mixer add curd and cashew nuts, grind into a soft paste.
  5. Once the meat is tender add curd yoghurt mixture, reduce heat and simmer for 15 minutes.
  6. Add chopped dates, again simmer for 10 minutes, until the gravy turns into desired consistency.
  7. Add the slit green chilies and coriander.
