Brinjal (Eggplant) sabji

Brinjal ( Vazhuthananga mezhukkupuratti )

Ingredients

1.    Brinjal ( eggplant ) cut into 1” long pieces – 300gms

2.    Onion thinly slices – 1 large

3.    Chili powder – ½ tsp

4.    Pepper powder – ¼ tsp

5.    Coriander powder – 1 tsp

6.    Chicken masala powder – ½ tsp ( optional – if not using add ¼ tsp more chili powder )

7.    Turmeric powder – ¼ tsp

8.    Salt – to taste

9.    Curry leaves – a few

10.  Oil

Instructions

1.    Mix brinjal pieces with 2-9 ingredients well.

2.    Heat oil in a nonstick pan, add brinjal to it, mix, cover and cook in low flame for 5-6 minutes.

3.    Open the lid, flip gently with a spatula, without mashing brinjal.

4.    Keep this in the open pan, at low flame till brinjal cook & fry well and oil comes out, fry by stirring occasionally.
