Cabbage thoran (sabji)

Ingredients

  1. Cabbage nicely chopped – 300 gms
  2. Carrot chopped – 100gms
  3. Onion chopped – 1 small ( instead, you may use 4-5 shallots chopped for better taste)
  4. Green chilly finely chopped – 2- 3
  5. Red chili – 2 ( optional )
  6. Turmeric powder – a pinch
  7. Curry leaves
  8. Cumin ( jeera ) – a pinch
  9. Mustard seeds – ¼ tsp
  10. Broken Urad dal – ¼ tsp ( optional)
  11. Coconut – 2 tbspoon
  12. Salt
  13. Oil

Instructions

  1. Crush coconut with cumin. Keep aside.
  2. Mix well cabbage, carrot, onion, green chili, curry leaves salt and turmeric powder. Keep aside.
  3. Heat oil in a pan, add mustard seeds, urad dal, let them splutter.
  4. In to this, add the mixed ingredients ( instruction 2 ) , mix well, keep all of them together, sprinkle some water ( if needed ) cover and cook on slow flame. Stir occasionally to make sure nothing stick to the bottom.
  5. Once cooked, add crushed coconut to this, mix very well, and keep on slow flame by stirring continuously until it becomes dry.
  6. Serve with fulka, roti or rice.
