Chicken dry roast (Ularthiyathu)

Ingredients

1.    Chicken cut into small pieces – 1kg

2.    Onion thin slices – 3 large

3.    Onion cut into cubes – 1 large

4.    Tomato sliced – 2 large

5.    Garlic chopped – 3-4

6.    Ginger chopped – 1’ piece

7.    Garlic – 4-5

8.    Ginger – 2” piece

9.    Cardamom – 3-4

10.  Cloves- 4- 5

11.  Black pepper – 6-10

12.  Curry leaves – a few

13.  Green chilly split – 2 -3

14.  Red chili – 3-4

15.  Turmeric powder – ½  tsp

16.  Red Chili powder – 2 – tsp

17.  Meat masala powder – 1 tsp

18.  Coriander powder – 2 tsp

19.  Salt

20.  Coriander leaves chopped – to garnish (optional)

21.  Oil – 4 tbsp

 

1.    In a mixer bowl crush 7-11 ingredients.

2.    Marinate the chicken with this crushed ingredients ( 7-11) together with  15 – 18 ingredients and keep aside.

3.    Heat oil (3 tbsp) in a pan and fry onion and curry leaves till brown. Add garlic chopped, ginger chopped, green chilly split, red chili and fry till crispy brown. Drain from the oil and keep aside.

4.    In the same pan, in the remaining oil add sliced tomatoes and fry till tomato is soft and slightly brown. Keep aside

5.    In the same pan add remaining oil and the marinated chicken with cubed onions mix well sprinkle some water, cover and cook in slow flame.   Flip in between to make sure nothing stick to the bottom. ( if you want you may sprinkle some more water in between )

6.    Once chicken is almost cooked, add salt and fried tomato, mix well and again cover & cook until the chicken is soft.

7.    Add fried onion mix, mix well, and keep in the low flame without cover for another 5 minutes, by stirring occasionally.

Garnish with chopped coriander leaves and Serve with rice/ roti.
