Easy chicken biriyani

Ingredients

  1. Chicken – ½ kg
  2. Basmati rice – 2 cups
  3. Boiling water – 3 cups
  4. Onion cut long – 3
  5. Tomato cut long – 1
  6. Ginger paste – 2tsp
  7. Garlic paste – 2tsp
  8. Green chili ( chopped & crushed ) – 5
  9. Yoghurt – ½ cup
  10. Turmeric powder – ½ tsp
  11. Vanilla essence – few drops ( optional )
  12. Oil – 2tbsp
  13. Ghee – 2tbsp
  14. Cardamom – 4
  15. Cloves – 4
  16. Star anise – ½
  17. Fennel seeds – ½ tsp
  18. Pepper – 5-6
  19. Cinnamon – 1 small
  20. salt – as needed
  21. Mint leaves – a few
  22. Coriander leaves chopped – a few
  23. Kismis – 1tbsp
  24. Cashew nuts – 10-15

Instructions

  1. Wash chicken pieces and marinate with 1 tb spoon curd (yoghurt) and ½ tsp of ginger and ½ tsp garlic paste. Keep in the fridge for ½ an hour or more.
  2. Soak rice for at least 20 to 30 minutes. Drain and keep aside.
  3. Add 1 tb spoon oil & 1 tbsp ghee to a pan, fry cashew nuts, Kismis, one by one drain and keep aside. Fry slices of one full onion until krispy. Drain and keep aside ( this is for garnishing )
  4. Add the remaining oil and ghee to the same pan, fry the remaining onion until golden brown add the remaining ginger, garlic paste and fry for a few minutes, add crushed green chili and tomato, fry again for five minutes.
  5. Add Yoghurt, half of coriander leaves chopped and some pudina leaves. Fry for a few minutes, then add marinated chicken enough salt, cover and cook on low flame until chicken is cooked completely and gravy thickened
  6. Add rice to this chicken, add boiling water, adjust salt, and add vanilla essence. Cover and cook on low flame until rice reach the top without any water.
  7. Garnish with cashew nuts, kismis, fried onion, coriander and mint ( instruction 3 )
  8. Serve with cucumber raita & green chutney.
