Kadai Paneer

Ingredients

  1. Paneer / a  type of cheese  – 300gms
  2. Capsicum cubed – 1 medium ( green/ yellow)
  3. Onion cubed – 1 medium
  4. Garlic vertically split – 3-4
  5. Green chilly split – 3-4
  6. Tomato cubed – 1 medium
  7. Cumin (jeera) – ½ tsp
  8. Cardamom -2-3
  9. Onion sliced – 1 medium
  10. Ginger chopped – 1 tsp
  11. Tomato sliced – 1 medium
  12. Chili powder – ½ tsp
  13. Turmeric powder = 1/4tsp
  14. Coriander powder
  15. Curd – 2 tbsp
  16. Tomato sauce – 2 tsp
  17. Chopped coriander leaves
  18. Salt
  19. Oil – 2-3 tsps

Instructions

  1. heat oil ( 1-2 tsp ) in a kadai ( pan) add onions and fry for 2- 3 minutes, add green chili, cubed capsicum and tomato cubed fry for 2 more minutes and transfer to a bowl. ( not to overcook vegetables, they should be crispy )
  2. Heat the kadai again add the remaining oil, sputter cumin, add cardamom, sliced onions fry till onions turn brown – you may add some salt, so onions will brown quickly.
  3. Add ginger and tomato, fry again till tomatoes become soft.
  4. Add chilly, coriander & turmeric powder fry for a few seconds, off the fire.
  5. Blend this mixture into a fine paste, add enough water and again add to the kadai. Bring it to boil.
  6. Add beaten yoghurt, tomato sauce, boil again,
  7. Add paneer cubes, cover and cook, till paneer becomes soft and the gravy turns into required consistency.
  8. Add all the fried vegetables ( instruction 1 ) ,mix well, off the fire
  9. Garnish with chopped coriander leaves.
  10. Serve with nan, roti.
