Vegetable fried rice

Ingredients

  1. Boiled basmati rice – 2 cups ( preferably kept in the fridge)
  2. French beans cut into thin strips – ½ cup
  3. Carrot cut into thin strips – ½ cup
  4. Capsicum cut into thin strips – ½ cup
  5. Chopped spring onion whites – 1 cup
  6. Garlic chopped – 4-5
  7. Sugar – 1 tsp
  8. Chopped spring onion greens – 1 cup
  9. Soy sauce  – 1 tbsp
  10. Oil – 1 tbsp
  11. Salt – to taste

Instructions  

  1. Heat the oil in a pan, add the vegetables, chopped garlic and sugar, sauté over a high flame for 3 to 4 minutes.
  2. Add spring onion whites and capsicum and sauté for 2-3 minutes.
  3. Add the rice, soya sauce, spring onion greens and salt. Mix well and sauté for 3-4 minutes.
