Thai green chicken and prawn curry

Ingredients

For the green Curry Paste

  1. Green chilies – 3
  2. Thai basil / Italian basil – ½ cup
  3. Fresh coriander – 1 bunch
  4. Fresh ginger chopped – 1 tbsp
  5. Garlic – 6 cloves
  6. Lemon grass stalks – 3
  7. Coriander powder – 1 tsp
  8. Turmeric powder – ½ tsp
  9. Brown sugar – 1 tsp
  10. Lime zest – 1 tsp
  11. Lime juice – ½ lemon
  12. Olive oil – 3 tsp
  13. Salt – to taste

Other ingredients

  1. Chicken breasts – 2
  2. Prawns – 1cup
  3. Carrot cubed – I carrot
  4. Capsicum cubed – ½ capsicum
  5. Mushroom pieces – 100gms
  6. Green peas – 2tbsp
  7. Radish cubed – 1 radish
  8. Fish sauce – 3tsp
  9. Coconut milk thick – 1 cup
  10. Olive oil – 2tsp
  11. Salt – to taste
  12. Lemon – ½ ( if required)

 

Instructions

  1. Grind ingredients for the curry paste with some water in a mixer to a fine paste. ( if your lemon grass stalk is not tender grind it separately and add only the juice )
  2. Marinade lightly the chicken and prawns in about 2 tbsp of the Thai green Curry paste separately, for about half an hour.
  3. In a pan heat about 1 tsp of olive oil add chicken and fry for a few minutes until it becomes white. Keep aside.
  4. In the same pan add prawns and fry for a few minutes. Keep aside,
  5. In the same pan add the rest of olive oil fry all the vegetables for a few minutes. Add chicken, prawns, the remaining curry paste with some water, fish sauce .Cook on low flame
  6. Once vegetables are cooked, adjust the salt, add coconut milk, with just one boil off the fire.
  7. add a final squeeze of lime ( if required)

serve with white rice.
